Not so fast. In Spain, patatas bravas are only vegan if the sauce is, and that’s where things get tricky.

What Are Patatas Bravas?
Patatas bravas are:
- Fried potato cubes
- Served with a spicy tomato-based sauce (“salsa brava”)
- Often topped or paired with aioli
The potatoes themselves are vegan. The sauces? Not always.
Are Patatas Bravas Usually Vegan?

Sometimes, but don’t assume.
Common ingredients that are not vegan include:
- Aioli (contains egg)
- Mayo-based brava sauces
- Fish stock in the sauce
- Cross-contamination with animal fat (usually from the frying oil)
Many places automatically add aioli unless you ask them not to.
How to Order Vegan Patatas Bravas in Spain
Ways to clarify that the sauce is vegan:
- “La salsa brava es vegana?” (“the sauce is vegan?”)
- “Lleva mayonesa o huevo?” (“does it contain mayonnaise or egg?”)
- “Solo tomate y especias?” (“just tomato and spices?”)
If aioli comes on top, say:
- “Sin alioli, por favor.” (“without alioli, please”)
The Big Mistake Vegans Make with Patatas Bravas
Assuming “brava sauce” = tomato sauce.
In reality:
- Some bars mix mayo into the brava
- Some add anchovy or fish stock for depth
- Some fry potatoes in shared oil with animal products
If it’s not clearly vegan, ask (that’s what you’d do in a restaurant back home, right?)
